Long story short, I have a friend that is new to Eureka (she's level 4) and I'm currently at level 20. If I party with her as a healer, just heal her and let her do all the damage, will the experience and kills counted for her?

If you're not in a party with her, then it will work fine.
I think if you are in a party, it won't work, but I'm not 100% sure. I thought about googling the answer, but you can just test it out faster than anyone could research the answer.
I believe it's 3 or 5 levels difference, anything after that completely negates all XP from mob kills. You can follow not in a party and heal them and be fine, but even if you're half a map away, if you're partied they won't get any xp for kills. However, if you have a double mount and you're able to haul them around relatively quickly, they'd still get XP from the NMs and that might be potentially faster. I'm also pretty sure they won't get hits on their challenge log if you're higher than the allotted level difference (even if they're ok) but that I'm not 100% sure on.
So far I have tested not being in a party and it worked out well, I wasn't sure about the issue I stated above but I think it's still be safe to just stick around and help.
