I don't know, I feel like people are overcomplicating the issue. You may have your beliefs that you hold dearly, but this game, at the end of the day, is a fantasy role playing game. People may create characters in their image, or ones they relate to, or something they like the look of, or maybe something just completely random or silly. Giving players an option of how they want their character referred to in dialogue isn't really a political statement or propaganda. I'm a cis female, but maybe I want to create a nonbinary character to roleplay as in the game. And no, I don't mean Balmung activities, but just basic roleplay: playing the game, going through the story, feeling immersed. If my character was constantly referred to with an incorrect pronoun, that would be distracting. Hell, it would be distracting if the character I'm playing now was constantly called a "he." It would be detrimental to my immersion. So no matter what stance you have on the issue, I think this would be a simple thing to implement that would accommodate more players, not just those who practice gender nonconformity (not sure if this is the correct term, but you know what I mean) in real life, but also those who wish to play such a character in a fantasy setting. And given the intimate and personal experience that quests are, well... if you don't like it, don't hack the person's account and play their story, I guess?
