Why do people want to load up what (most of the time) is supposed to be wilderness or at least sparsely settled environments with a metropolis' population?

Open world zones don't need to be more populated. They need to continue to feel like a real world. The less you make them feel like a real world, the less desirable they are to visit. If there's some special FATE or a S rank hunt mark that need a large number of players, shouts to linkshells will usually attract enough players.

Leave the zone crowding to the cities.

With the open world we would also wish that the open world has actually interesting things in it and doesn't feel lik an empty void.

As I said the game isn't build for open world, it was build to be instanced, that's why it needs to be reworked ... again.

Letter from the Producer LIVE Part IX Q&A Summary (10/30/2013)
Q: Will there be any maintenance fees or other costs for housing, besides the cost of the land and house?
A: In older MMOs, such as Ultima Online, there was a house maintenance fee you had to pay weekly, but in FFXIV: ARR we decided against this system. Similarly, these older MMOs also had a system where your house would break down if you didn’t log in after a while in order to have you continue your subscription, but this is a thing of the past and we won't have any system like that.
