The main reason to do Eureka is the relic weapon and while thats already outdated on Eureka release, it will be even more outdated and only worth it for glamour in 5.0. So unless they decide to put something thats relevant for 5.X into the content, no one is going to do Eureka anymore. The content will technically stay as in: You can still go in, they wont remove it, but it will be a lot more difficult to get anything done in there, even if they apply heavy nerfs to damage dealt by mobs and NMs, numbers of mobs killed to spawn NMs, increased droprates for crystals etc.
The second question:
Well, thats obviously very much up to taste. I didnt like any of the latest raid- and tomestone gear they added.
What they are doing though, is actually pretty simple: Leveling gear is less "refined". It looks rougher, less decorations, simpler materials, stuff added like little bags and knives that make you look more like an adventurer out in the wild and not so much like a shiny hero. That shiny-armor is reserved for higher levels.
I'm under the impression that specially with Stormblood they started drawing inspiration for their gear from more different places - we're getting sets based on winner-entries of gear-design contests, they're drawing from previous FFs (specially FFT for the Ivalice-raids - funny enough I think most of those sets look plain aweful) and from other cultural influences (for example the more eastern looking tomestone-set or the mongolian-like coats from Bardams).
The people design this gear are artists and its their job to come up with new, intresting designs - I'm pretty sure they're just going to draw inspiration from new sources that are going to fit the places we're going to travel to in 5.X. Wether or not those are going to be considered pretty is up to personal taste, obviously.
