Other than wanting to see a Garlean gunblade melee dps and a Gambler using Cards/dice as a ranged DPS I don't have much interest in specific weapons being in the game. It's more about the classes themselves rather than the weapons imo.
Geomancer and Time Mage have both been written out using AST's lore so those aren't going to happen anytime soon. Dancer hasn't been written out yet though.

Mechanics are Aesthetics. Graphics don't make interesting gameplay.
Geomancer : Bells (It always was their main weapon and in the "new" dungeon the geomancers uses bells too)
Dancer : Fans
Beastmasters : Whips
Blue Mage : We have enough swords so why not a scythes?
Gambler/Corsair : Cards
Chemist : Magical phials
We also need nunchaku , fighting staves , a ranged that uses chakram and such , hammers , double blade weapons and maces
How about something completly original, like a pyrotechnician that would have a long box that would fire like a minigun, but shoot fireworks instead.
I also would like to see whips as weapons.
I could see a Blue mage having a Warhammer or Mace, a warhammer being a longs staff-esque weapon to have some decent casting animations, while a Mace being similar to early THM/BLm weapons.
Geomancer could get a Khakkhara, a real life "weapon" used by monks which can be quickly described as a "sounding staff"
Beast Master could get a Crossbow, mainly because I think if we had a Whip for an animal based job, That might attract contravery
Chemist could be a Garlean/magitek job and be given a Controller/mini computer and Magitek Drones to administer their chemicals, maybe even add some mathematics as a Arithmetik to reference Tactics Calculator

Axes in both hands is silly and unpractical. You can swing a one handed axe just as quickly as 2, one handed swings. Also when you swing a an axe in real life, it's more like how a tennis player serves, they turn their whole body and hips into it. Trying to do that with both hands would be meaningless, as it would be slow (a swing with the right hand means turning to the left to "wind up" for the swing, and the follow through of a diagonal slash with the right hand would "subtract" from a potential slash with the left hand's axe as you would need to now reverse the follow-through of the right-handed slash to wind up for the left slash.

I'm still surprised by the complete lack of maces/hammers in this game to be honest.
I would love nothing more than to have a scythe, not just weapon skins.
