In terms of class based fights, I remember Gladiator 15 when ARR first came out. We had other classes unlocked at 15 back then, not 10 and it was do or die. The forums were full of threads screaming about this quest and I'm pretty sure it helped set the stage for avoiding Tank as a class. Keeping the paper thin healer alive, tanking multiple targets and somehow dps'ing them with no skill bar. It's likely the one I repeated the most.

Brayflox Longstop, that last dragon boss as a White Mage.

Everyone was eating so much damage and i ran out of mana quickly. We had a Summoner in the party who helped me out with healing, otherwise it would have been a wipe...

Titan 4 mann story fight took 1 hour to complete, then Garuda 4 man took 3 hours... we had to abandon Qarn because i always died on the doom at first boss... oh man i was SO bad back then in 2013, i can't believe it xD i am always impressed how good newbies are today. i needed 6 months to become a decent player.

Forget the mobs / dungeons, it's the people who think they know their job and don't listen even when your being nice and trying to help them. With any job as a first fight.

    Examples;

Tanks over pulling when there is a new healer and being under geared

    Healers casting regen while pulling

BLM rather cast than avoid aoe or attack

DPS standing in front of mob even when being told not to

Wiping in old content do to mechanics That is what hurts the most

PotD / HoH killing trash mobs when there really is no need to -.-/

Definitely God Kefka as a WHM. I knew the healing requirements would be high, but honestly the damage took me completely off guard.
Not to mention you're constantly playing hot potato with aggro, so you can't even heal as much as you'd like. It really was a fight that I had to readjust to, since I was DPSing way more than healing in every fight leading up to this.

Play all the ARR EX's solo unsynced.

Ifrit, Levi, and Ramuh have the same mechanic of "kill the adds before resuming dps on the boss, else enrage", in some cases, the actual mechanic is harder unsynced since a trailing DoT will push the mechanic phase faster than it would synced, so you have to literately kill the adds within that 2 second DoT tick unsynced . When you do it solo unsynced it's easier to not use the DoT's on the boss and only on the adds.

Shiva, King Moggle Mog and Titan have mechanics that are essentially luck based. Getting thrown off Titan's arena or into the Shiva permanently-frozen state is a basically a luck thing, and if you have low latency, you can dodge the failure conditions. Moggle Mog... well that's basically luck since he drains your MP, so to do it on a healer is pretty hard solo, but I did it.

Most of the 2.0 content, "hard" was a moving target. The first hard final boss would have been Isgebind in the Stone Vigil, because many tank players didn't do the Paladin or Warrior quests by that point. After more people actually started having access to "tank stance" it became less of a problem. The ARR MSQ finale was never hard. Amdapor Keep's Demon Wall was the first actual "hard" mid-boss, and if you go back to the forum posts from 2013 you'll find people demanding that everyone wear darklight or get kicked just to get past it.

2.0 Savage T7, was PLD. BRD in the static at the time still has PTSD and twitches in RL whenever he sees a cyclops or a lamia. Poor guy.

    Raubahn Extreme.

Or, more seriously.....I struggled with Cruise Chaser, not because of the mechanics, but because there's a lot of bright light effects on a generally muted-color battleground, and the contrast hurts my glare sensitivity. I had to wear shades to actually see anything.

Nidhogg Extreme as a Dragoon. I had trouble navigating the fireballs since I have limited depth perception and from certain angles, it appeared to me that they were all in a straight line. Fortunately I had great teammates who let me put a marker on them to follow, and I also learned how to speed up the rotation of my camera so I could spin and see the actual placement of the fireballs.

I don't think I've ever had as satisfying of a fight as I did with that one. Not only did I overcome the challenge of Nidhogg, I overcame the challenge of my own limitations.
