It's always been my favourite, I guess since when I played Hana and Kibou on Southern Cross, Carbuncle was their patron Spirit.. sort of. Okay technically Alexander but Carbuncle was directly between them and Alexander but..
Anyway. Carbuncle!

I second Gilgamesh and carbuncle. Though I'd prefer Gilgamesh as simply story-related battle, not a summon. Genji Armor anyone? Carbuncle would be self explanatory as a staple for the SMN; low cost, but multi utility summon.GIlgamesh fits perfectly into the FFXIV universe... like in FF12:

edit: Heck, Gilgamesh doesn't even need to be a battle, he could be an NPC as well, /cough. As long as he is incorporated in an interesting way.
As far as the current confirmed primals are concerned, I'm happy with what they have. I'd have liked it better if Ifrit was more beast-like, as in 10 and 8, rather than demonic, but the one we have is great too.

How paladin looks on a controller:
Bahamut is usually seen as the ultimate summon for some FF titles, and in FFXI he is a boss and not summonable. I do not see the issue here of why Knights of the Round cannot make a return with other very powerful summons and monsters alike, and its for that same reason why I do not see a problem we're getting crystal tower, and a meteor like disaster like in FFVII here in FFXIV.In all fairness, SE hasn't brought back any of the final (ultimate) summons in the main series since FFVI *unless Crusader (JP= ジハード 'Jihad') = KotR, which I don't necessarily agree with.
FFVI = Crusader
FFVII = Knights of the Round
FFVIII = Eden
FFIX = Ark
FFX = Magus Sisters (*not originally a summon in FFIV)
FFXI = N/A -- we can't say what the final summon is yet
FFXII = Zodiark (*from FFT, but not main)
FFXIII = No real ultimate summon since all chars got their own.
I'd prefer to leave KotR as FFVII's legendary final summon. The ultimate summons are part of what gives each game their character.
The window of opportunity is there to be open. FFXIV can take everything that works and use it in its own way as content.
Although that is not fact but an opinion. Was that statement really necessary to prove something?

I'd like to see Gilgamesh be something of a "We came for {insert boss name} but we got Gilgamesh instead" kind of thing. He'd have his own, unique loot list and difficulty tuned to (or maybe a bit more than) the encounter. Something of a reoccurring encounter kind of character (like what he originally was like in FFV) with goals parallel to the main antagonists.I second Gilgamesh and carbuncle.
