Good afternoon and thank you for posting on the Final Fantasy XIV Technical Support Forums.
I can't tell why disconnecting the second monitor would fix the issue but it may have to do with it the game using all of it's power on one monitor to run the game and then having more to do on the other monitor. I'm not sure why this would restart your PC and not just crash the game, however. Regardless, if you run into this issue again, please keep us updated.
