Okay, so keep in mind I'm a level 42 culinarian and haven't unlocked the other classes yet. I'm speaking purely from what I've heard and have (most likely) no idea what I'm talking about. These are just my opinions based on what I've heard about.

From what I've heard, when specialist classes were introduced, there were recipes only specialists could make. People complained, and now that's a thing of the past. It's also really cheap and easy now to change what your specialist classes are, apparently. I feel like this makes some classes more lucrative (weaver, etc.) than other ones (carpenter, etc.). I worry for the future of some of these classes as a result.

My solution lies in desynthesis. As an example, alchemists can now make infusions of strength, dexterity, and more, and these are considered the best potions to use in raids. What if the next potion that comes to the game requires an item from desynthesis that only one class can acquire in addition to some of the gathered materials? Suddenly it matters what classes you train in desynthesis. In this way, the current "omni-crafting" is discouraged to create more demand for classes that don't have much right now.
