Because of the "shear amount of stuff in the event" it lasted already about 3 times as long as other events. They can do it for a whole year and right after it would end, there will be someone who complains about that he/she couldn't take part.

Because it's better to have a new one.
This isn't because Lightning got 3 (I don't say it was a good thing) that Yokai should also have 3.
It's okay to bring back a popular event. But just one more time.
If people wheren't on the game when that event happened, well too bad for them, that's how thing goes. You can't always be here for everything in game anyway.
Look, I personnaly missed the opportunity to get every emote from the Moonfire Faire (if I remember the name correctly), the one with power rangers-like poses. Well to bad for me, if I want those emote that badly, I'll go in the cash shop (except I won't lol).
We just have to accept that the game can't endlessly make some event coming back because some people missed it. There'll always be people who will miss it.
And yes it does affect people who already made it cause we could have get a new - maybe interesting - event instead of a recycled one.

If they were to do the Yokai one again I'd much rather see them update it to be of benefit to the newer classes than have a repeat. Red Mage and Samurai for example don't even have weapons to collect. The Lightning event is the same except Astrologian and Machinist don't have special weapons either. Not even Thief which was added as a new job before Heavensward came out has a weapon to obtain from this event.
EDIT:
I have to agree with this as much as I don't like missing out on event items. Fortunately some do show up as Mog Station items after some time. However I would prefer to see an alternate means, such as rewards for MGP at the Gold Saucer or obtainable with achievement point certificates.

We don't have Thief..... Do you mean Rogue? :PIf they were to do the Yokai one again I'd much rather see them update it to be of benefit to the newer classes than have a repeat. Knowing SE they're probably just gonna throw the weapons/mounts/pets on the cash shop in a year or so to make more money.
Put the weapons to the moogle shop and the event ingame at the same time. Then the players can choose if they want to do the FATEs or just pay for it.

I personally want the Lightning event to come back. I wasn't here for any of it :< but I think the items are already in the shop, so that's unlikely.
Idk if it was me but for that event, I went to areas that had more then one Yokai token and switch them around. It felt like the process was going faster by doing this so the grind wasn't too bad.
I personally dont care. The fate grind was horrible similar to Atma almost. I just hope another event like it doesnt show up that involves RNG and Fates.
you know it's funny the lightning event came 3 times 3 games and we only barely got any gear from the second and third games no outfits just snow's axe the bow you'd think that they could have updated the item list for the other stuff. Yokai was just the same stuff as the first time too though not too sure how they could improve lists there
