If they're going to do unique jobs, they're probably going to do variants of jobs that might be harder to implement in the game such as Blue Mage or Beastmaster by taking elements from them and cramming them into some other job theme. Astrologian is the current major example for that.

I haven't played all the final fantasy games so I don't know if this has been done before; but a Spartan-esque tank that uses a spear and shield. Strong pysical defenses that play of other melee jobs (defensive brotherhood type skill) and counter attack based design. Game needs more tanks before DPS and healers I'd say.
This was done before. I wouldn't mind that Musketeer job from 1.0 that we were teased with. I know we got Machanist now but there are ways to make it different.
The girl from Aldouin would be neat. Pretty much a monk with hand magic similar to fighting games throwing orbs of magic. Her trust is a good example for those who played XI that far.

That seems like a monumental task, there have been so many jobs throughout the various games. I might be wrong but the only job type I can think of that's not prevalent in the series would be a necromancer type job. But I'd agree with Claire, if they are really doing this then they likely already have something in mind.
I know that Engineer has already been a thing, but perhaps a Magiteknician? Could learn from Cid or Nero... It could feasibly fit any role you wanted it to, though I kinda like the idea of a healer who uses machines and a big two handed hammer...
For this game, if they implement Beastmaster as a tank, I would like to see it function more like Interceptor/Shadow. Just give them an offensive pet and a defensive pet and the pet can intercept attacks, give defensive buffs and perform their own attacks. Or perhaps even one pet with a flank configuration for offense and a guard configuration for defense. Instead of an HP bar for the pet have it be the Beastmaster's resource gauge so it doesn't become a convoluted healing debacle.Though most "Pet Tank" idea seem to be "Have the pet tank", and as much as I'd like to see that, honestly think the pet would have to act as support to the player tanking instead, due to a lot of the limitations.
Probably something like the BST doesnt have tank stances, but instead, the pet toggles between doing dmg, or putting a tether on the tank to heal them and raise their enmity.
(And for invuln, maybe have the pet equal you in threat, and then stay ahead of you in hate, taking 75% less dmg until dead, unable to be healed, and reseting their summon action.)
