Just make it so that if you're not a high enough rank for that grade, you *CANT* mine it (like every other MMO out there). Give an error message stating that you're "not skilled enough to mine at this location" or something until you're the proper level. For example, with grade 4 nodes you cannot mine them at all until level 25, at 25 you should learn Lay of the land (the one that gives general NSEW direction) for grade 4 nodes and be able to mine them with 4-5 swings, and have access to leves for them like you do now. At 28 you get Prospect (the one that points you directly to the node) as well as a "normal" success rate on the nodes. And then maybe at 32-33 you should get access to a third harvesting level for grade 4 since the exp tapers off considerably but you still do not have access to G5 until 35, just to give a little bit of an exp boost without constantly running back to town for more leves.

I think the fact that a level 1 can mine a grade 5 node is the real gamebreaking problem here, not whether or not nodes are displayed locally on the minimap.

Also, correct me if i'm wrong, but I was under the impression that all harvesting nodes were generated on a per-character basis, and that other characters do not interact with your nodes in any way, shape, or form (which is why node respawns are based on either time or you interacting with two other nodes). I'm not sure how some lowbie can be tapping out "your" node if they aren't even hitting the same node as you.

completely agree with you, and i wish they would do this, it would make leveling some worth.
