How to get to Limsa Lominsa?

I'm a new player, a level 15 Conjurer, so of course I'm in Gridania. But I keep running into things I want to do like this:
    • learn to fish — only in Limsa Lominsa
    • learn culinary arts — only in Limsa Lominsa
    • try an instanced dungeon with my LS mates — guess what, the only one available is in Limsa Lominsa.
I feel like I'm missing out on all the coolest (to me) content. My searches for how to get to there from here have turned up mixed results; some say to use a FC house (seems extremely unlikely, given how hard a time I had even finding a LS to join), or an airship (supposedly unlocked at by a level 15 quest, but I haven't seen any sign of that, and most of the "guides" on airships are incomprehensible to me).

So. How exactly does a level 15 adventurer get from Gridania to Limsa Lominsa? Or do I just have to wait until I'm farther along in the main quest before I pick up fishing, cooking, or party dungeons?

Just continue on your main story quests and you'll be there soon enough.

The MSQ that leads you to the other cities is at level 15. You just need to progress them.

The quest "The Gridanian Envoy" will lead you to Ul'dah and after that, the quest "Call of the Sea (Gridania)" will lead you to Limsa Lominsa. These quests unlock the airship you need to first travel to the other cities, unless you decide walk the entire way. Once you reach the other cities, you can unlock the aetheryte in each city so that you can teleport to them easily.

You can't walk to Limsa from the mainland though given it's on an island, meaning the ferry from Vesper Bay in Western Thanalan is the only real way of getting there, and that used to also be locked until you gained your airship pass during the storyline, making it rather moot (I think that restriction has since been removed though, but it was still restricted months after the game launched). An alternative as you mentioned though is indeed to join a Free Company who has a house in Mist with a miniaetheryte, and teleport there, and simply zone out of Mist into Limsa, and then attune to the main aetheryte in Limsa's main square, allowing you to teleport there from then on.

Either way, undertaking the main scenario is probably the best way as so much of the game is locked behind main scenario quests (main scenario quests are identified with an exclamation mark inside a flaming meteor logo instead of the regular speech bubble that ordinary sidequests have (and quests that unlock content like airships also have an additional mark on them in the form of a plus sign.).

I'd be interested if anyone knows this for sure, since I and other mentors in my world's NN have been operating under the assumption that the ferries were still locked until after the Envoy arc.

Update: Thanks for the confirmation, Legion.

Just continue with the main quest. Not only do you need it for unlocking travel to/from Limsa Lominsa, you also need to follow it to unlock instanced dungeons, as well as loads of other features.
Almost everything in FFXIV is gated behind the MSQ one way or another.

This. 100%. Most of the important things in the game are locked by the MSQ either directly(the MSQ sends you to the other towns so it gives you airship access, it makes you run a dungeon so it unlocks it, etc) or indirectly(for example you wont be offered the quests to unlock some optional dungeons until you finish specific steps of the MSQ). Its always a good idea to be at least reasonably caught up with the MSQ.

Side notes: If you havent already, make sure you do your level 10 conjurer class quest before you make the trip to Limsa(this is another requirement before you can learn to cook or fish - or take on any other class training that might interest you later). And you should be able to unlock the first couple Guildhests now if you really want to get your feet wet in instanced fights with your LS friends(i believe the first 2 were level 10 required). In addition to that, if you havent already its advised to take up the Hall of the Novice training for some basics of how your class should function in a group dynamic plus some decent gear(the actual hall is outside Limsa, but you can get the training from any city - look for a Smith NPC at the inn).

And finally, welcome to the game!

The actual Hall of the Novice is right next to the entrance to Sastasha (the first dungeon) and the MSQ will even send you to visit the hall on the way to unlock Sastasha.
Doing the training in the Hall is indeed strongly recommended. The gear you get is quite good - especially the ring you get for finishing it - and the training itself, while not all that special, can be useful for someone new to MMOs.
