You'll be able to have more than one. Chocobos are going to get their raising system and become battle partners while the monster ones are mostly aesthetic. At least thats what the devs have said so far.

Se can make obtaining a mount an instanced fight that you have to kill 6 roaming NMs to enter. Then they can decrease the drop rate so low that you have to kill the fight 150+ times before getting the mount of your choice.

We have PLENTY of awesome 3d models but none of them are used to add value to the gameplay experience. That looks great but until it's useful don't just throw it in our lap.
