If you want uniformity simply suck it up and level all the other jobs to 51. If you really need all jobs at 0 then start a new character purchase the story/leveling booster... problem solved.
I can sympathize with you as I have OCD as well but complaining about it is not the answer. The best route you can take is to find a way to make it work for you.
Were numbers invented or discovered? How many Moogles does it take to make Kuponut rum? Answer: zero... They will give you a quest to make it.

Same here. I go crazy when I look at my profile and I see that my GLA and MRD are the only classes I don't have soulstones for. I have no desire to level those classes, but ugh! I do deal, but it indeed does drive me crazy when I look at it. My FSH was also my only gatherer not at 60, and so I got it to 42 now. That's different though. I like fishing.This. As someone with diagnosed OCD, I can say that it irks me to no end that my profile is a mess while I'm leveling things and I really hated before they changed how jobs worked that arcanist sat at 15 and thm sat at 26 for me. Drove me nuts. Dx
But since you don't look at your own profit so often I learned to deal with it. But I could understand why someone would want it to be clean.
I have thought about trying out DRK, and finally getting my tanks to 30 would not only alleviate some of that crap, but also give me some good experience opposed to just jumping right into 30+ tanking.
Perhaps they could make a craftable item, maybe like a "Potion of Spear Based Forgetfulness" as an example to reset your Lancer level to 0 (with other classes having their own names for the potion, or maybe make it a book called "Moving on from Lancer"?). However instead of having to do the quests again, you just talk to the guildmaster and ask for a "refresher course" and they'll bring you back up to speed (either start at the level you start as for that class/job, or maybe bring you back up to the level you had before?). All abilities you had unlocked through quests will be unlocked by reaching the level for that quest. Good way to inject a niche item into crafters too.
White Mage ~ Scholar ~ PaladinBoi if you got kicked for the same thing in over 20 duties I strongly suggest you think hard on whatever the hell it is you're doing
As I'm sure you are well aware, it takes more than one person to be able to kick a player from a duty, so in all those instances there were at least two people agreeing they'd be better off without you tanking.
My suggestion is to get everything to 70. It'd give you a better understanding of each job, thus improving your skill as a player.

But far more work for the devs for a very niche (and frankly useless for the masses) feature that can easily be solved by levelling your classes.
I wonder though... If the OCD is such a problem, why weren't the jobs levelled evenly in the first place?
As an example, my GLA is 24 and my MRD is 19. I got everything else to 30 except these two, but why? I had every intention to, but the main reason was the previous cross class system. MRD previously had quite a few skills that were mandatory for not only tanks, but some DPS too, and in the 19 levels I played MRD, it failed to keep me interested, and like the OP, I kind of wish I could lock it back up again as I don't plan to level it anytime in the near future. I'm guessing a similar mindset, and the OP just ended up not enjoying it, and that number is like a constant buzzing that never stops.
Of course, I am not requesting a feature like this. For me it is easy to deal/live with, but that buzzing remains a perpetual annoyance. It can be more difficult for others to find a way to shut it out.
