If you're serious about crafting, there's nothing to prevent you from getting all 70. But if you're just interested in useful cross class skills, just go grab GSM 54 for Maker's Mark and CUL 54 for Muscle Memory, then focus on your class(s) of interest.

Both ALC and GSM are fine choices. This is something that is entirely up to you. Both will have their own advantages. There's no right or wrong. Just follow your heart! Once you have both GSM 54 and CUL 54, you will have all the important cross class skills anyway. Specialist or not, you will be able to craft everything on their master recipes once you hit level 70.
