If you want to see some past cutscenes involving Aymeric, the "Unending Journey" you see in all inn rooms allows you to view some (but not all, annoyingly enough).

Cross-reference against your own in-game journal to determine which quests would've included a scene with Aymeric speaking, then search away for that quest in the Loremonger.

Ser Aymeric has this badass line he shouts as he enters the fray at the liberation of Ala Mhigo right after the first boss the Scorpion. A lot of players miss it because they just rush off to the rest of the dungeon but if you linger he comes by and passes you.
He says something to the effect of "We are the Fury's Spear! Who are we?"
Lucia answers: Ishgard!
Three other temple knights in tow answer: Ishgard!
I always wanted to jot down the full quote when I had a moment because it was a great. A shining entrance for the Eorzean Alliance's newest member state.
If anyone is doing that run later I would appreciate a screenshot of his speech bubble or just his exact words.

<flipping through tome> Funny how I remember him being such a smooth talker but can't quote much of him off the top of my head. Most of my favorite moments with him are where he's clearly struggling to reconcile his work ethic (unable to shirk any duty in the slightest way) and his desire to cast aside social obligations and formalities and just drink with his friends. You can tell this man has a grill that's never been lit and a "Kiss the Cook" apron that's never been worn, but keeps telling himself, "One day."
