How do you remember mechanics?

Rather than remember specifics. Just try and learn generalized types.

All mechanics within those types are dealt with in much the same way and I find it's easier to remember things that way.for example this boss has a stack mechanic a jail mechanic and a gaze mechanic. Easier to remember than trying to remember the specific names of each of those in every fight. Even in instances where they might be dealt with slightly differently often just remembering it has a jail mechanic is enough for you to remember the specifics when a trigger for that mechanic pops on screen.

Some fights, I'm just hopeless for - stupid fore/aft/port/star gets me every time. Practice makes perfect.

This is easier than you might think. It's basically always front and back. Or left and right. It's never front and left or back and left for example. So you can simplify it by if it's "fore" get beside it. If it's not then get behind it. And you'll ace it every time.
