Research would answer the question for you, not individual opinions.
Your best bet is the check out gameplay videos (in relevant content) of the classes that take your fancy. If they visually appeal to you, unlock it and give it a spin to see if you gel with it yourself. At the end of the day, "Challenge" is relative. Some would struggle with priority systems, others may struggle with extensive rotations. Some may prefer ranged, some prefer melee, some have bad computers where latency is a thing, others are on 20ms/60FPS and want phat explosions. I've no time or interest reading personal opinions on what X or Y individual found 'challenging', seeing as their strife may not apply to me when I get my hands on the class in question. Nothing contests hands-on experience, so hop to it.
Desirable classes, however, are a far less convoluted affair. Anything capable of a) pumping out respectable deeps and/or b) pumping out party-buffs (preferably a combination of the two) will always be welcomed over greedy classes, though sometimes greed is accepted when bases are covered by a group and said greedy-class is top-dps capable.
Until two days ago (as a Healer main and 2xTank off-player), MNK was the only DPS I had given any time (ie. gotten to max-level). That changed when I randomly decided to level that filthy BRD I had at 40 for the last few months. With some basic research (and <320 gear) I'm already reaching 3.7k ST - which isn't great, but a solid start for a newbie - and your mere presence during this is providing crit to the group. Dispel, MP/TP refreshers, bonus-healing buff, DirectHit buff, DamageTakenDebuff (and more) is on the table for those who really want to push it to the limit. MNK has a moderate rotation whereas BRD is pretty much a priority-lottery. Have found it a lot of fun thus far and can see how you really need to be on-point when pushing for competitive deeps (with the blessing of RNGeezus). Even on my worst day, it's nice to know that you're capable of providing something else to compensate, whereas my MNK (even with Brotherhood) won't be making friends if it's doing equivalent DPS and only capable of providing one group buff.
