So I've could swear I've seen people recommend anywhere from 600 to 750 GP, but my question is, how much do I need and what does each amount give me? I'm current at just over 700, and I'm wondering if it's worth it to push up to 750.

From what I've seen, anything over 700 is overkill. 700 grants you extra bonuses while gathering, and allows for an extra ability, beyond the 600. I have 700 and it's more then enough. I do know u need 1150 gathering, and some suggest 1200 perception, if gathering for HQ rare mats. But I don't have 1200, cause as a crafter, I don't even need HQ mats to HQ the new 2*...

I think the next breakpoint for Collectibles will be at 800 (or more accurately, 850, for the 5% gathering chance bump). That will allow you to add a Single Mind to the very first Impulsive Appraisal, allowing for one additional gather.
750 is best at the moment, you have all you need for collectibles and also extra 50 for 5% buff so you never "miss".
I went with 780. At 780 gp you can king's yield and bountiful yield II 3 times, or sharp vision II and BYII 2 times on timed nodes. Nice for mats but doesn't help much for collectables.
In my honest opinion, No. I have 691 GP and I am fine, the reason people suggest getting over 700 GP is to use sharp vision. Like I said, I don't need it and never struggled without it. It didn't take me too much time to gather over 2000 yellow scripts in a few days playing casually without 700 GP.
