I'm just not getting the Samurai hype, what am I missing?

So do you think SAM is going to be more fun than NIN? Ive also been leveling a MNK while I decide what to level to 70 first. Im not really sure what to do

Im sitting on a 62 SAM who I find okay to play, 60 NIN who I generally enjoy and a 31 MNK which I find pretty fun so far.

What should I do here. If I level SAM first im kind of banking on them becoming more fun with Hagakare, which might be true.

Go as Monk first, then NIN and finally SAM. Maybe after spending some time with other jobs you'll come back to SAM with renewed interest and will feel like leveling it to 70.
