I've heard a variation of this request before, where, when you complete a challenge, you simply get an option to accept the reward or not. If you don't accept it for that class, then the challenge remains one shy of completion (4/5, 9/10, 29/30 or whatever), and you get the option again the next time you do the associated activity.

It's pretty much the same as the claim button you suggest, but claiming it will give the XP to whichever class last completed the task. (For instance, clicking "Claim" for Craft Up a Storm would give XP to whichever class you last crafted an item with.) I'd support the suggestion in that form, where you have to have at least done the final step with the class you're claiming it on.

It still takes care of the current problems with either accidentally completing where you didn't mean to or of having to hold off on doing stuff to avoid completing it.

That's because the challenge itself is simply to craft stuff, with no specification of levels. You could also do all 30 of them as trivial level 1 items and it satisfies the challenge. So that final step you're dismissing as negligible is as valid for the challenge as any other.
