I would actually say Arcanist isn't a good choice because you can grind it to 30 easily and switch to Scholar, which has near instant queues. My picks would be either any job you want at 60 but simply dislike playing or any ARR DPS.
A class you're willing to learn and play.
None. Keep your money and level the class/job. You will learn better how to use it as you level. But, if you are insistent on it I would do one of the dps classes/jobs. Tanks and healers have near instant queues outside of PoTD, so are a lot easier to level without jump potions. Dps it would be PoTD or pvp only as othet dungeons would be long queues.
How about none of them?
Jump Pot people ending up in DF is not fun. You don't get the newbie bonus for carrying them through the dungeon and since they got to skip a huge glut of content, they never learned about things like Stack mechanics and they usually show up to your run entirely clueless. And of course, no Newbie Bonus makes it even worse.
An actual newbie, you'd get the bonus AND they've actually gone through the previous content somehow and so they should at least have somewhat of a clue on mechanics that were present in previous fights. Usually. Not always.
But after carrying their butt through another DF... we at least get the Bonus.
Not so, with a Jump Pot person.
And also, oftentimes a Jump Pot person does a horrible job playing their character as they have zero practice. I mean, jump into Floor 51 of PotD on a new class... that's what Jump Pot people get, but only worse.

Healing DRK is literally... the same since ShB. The reason why people think it's a meme to heal nowadays because DRK receives very little to no buff to their sustainability vs 3 other tanks getting something useful. If you're capable of healing DRK back in ShB (or any tanks), then you'll heal EW DRK just fine.
I must be odd then cause I jumped my monk and I also watched videos and practiced openers and rotations on the dummies until I felt ok going into dungeons. I feel like ALOT of people did what I do and actually looked up whatever class they are using. Noone complained to me how I played my monk in the content nor was I ever kicked. Hell most people who look at my profile in any dungeon and found out I jumped are shocked and I end up with all the comms in the dungeon. Not all of us are bad lazy assholes D:
My vote is for arcanist also.
Only jump if you intend on learning the job otherwise and willing to practice a bit on before diving headfirst into the level 60 content.
I had a jumped WAR in Qarn last night that was the exact opposite of these nightmare scenario players that can't tell their butt from a hole in the ground while still assuming they are an expert at their job.
He was trying to run a bunch of lower dungeons to get his bearings first. He asked questions, we nicely answered. We explained bosses and other mechanics just like we would for any newbie player. It was a great run. Honestly, one of the most pleasant runs I've had in a while.
Be like that tank.
