Not a bad idea. There is a lot of stories to explore in FFXIV but as you said OP, it has to be done right. Imagine a anime series of XIV exploring the conflict of the War of the Magi or focusing on new characters exploring Eorzea and beyond without been the warrior of light. There is a lot of potential but in the end Square Enix must decide if it profitable or not. There animation projects have been hit or miss if I remember correctly.
