Unlikely, it would just mean all players would be unable to play the game for a week. The only server with an issue at this point is Balmung.

If they went down a week. A whole cry for compensation would rise. And well with that SE would do so. But I doubt it would work as you want it to.
The backlash would be massive.
Innocence doesn't mean an absence of wickedness, nor is it represented by the absence of anger or hatred. Innocence is when seeing others hurt also hurts you. When one becomes blind to the people suffering in the world, that is what it means to have lost one's innocence.

Having the servers shut down would not help - except maybe by making some people leave the game altogether.
What would happen if they did shut down the servers is:
a) Nobody would be able to play during that period
b) Extra long log-in queues when the servers came back and everybody tries to log in at once
c) Lots of very annoyed players
Shutting the servers down for a week, especially before Omega and Savage release, is a great way to utterly destroy hype for your expansion.
