Not directly related but at least to get a conversation going. I know when I did leves for gathering I was able to hit 70 from 60 easily and without upgrading any gear (I had penta melded ironworks mixed with the i200 Scrip gear) So I imagine it should at least get you through 5 levels. I haven't tried any crafting yet though so I cant say for certain.
The ironworks gear will be good enough to easily get you to level 70. However, I wouldn't waste gil on it as you can pick up the level 61 set from an npc vendor instead for probably much less.
You don't need anything close to ironworks to level from 60-61 (melded HW white gear would work fine) and that's likely the biggest hurdle for leveling.

Ummm, I'm still now 57 on my GSM.
Whenever I'm 60 is moogle daily still a good source for leveling? Or there's anything else? I saw many people doing leves in Kugane and (maybe it's the best choice now?)

I haven't really followed the changes to the older content, but in HW, they completely reduced the exp you got from old ixali dailies and ARR leves within a few days of early access. I'm assuming that the same has been done for SB.
Leves are always the fastest way of leveling provided that you have enough allowances saved up. My personal recommendation would be to use leves for leveling until you run out of them. Given the fact that there don't seem to be many starred level 70 crafts outside of a few glamours, the most useful thing to do would probably be to get as many of your crafters to level 65 or so as quickly as possible. That will unlock the bulk of released recipes.
Moogle dailies only give 10k experience per quest at 60+, so that only leaves Leves as an alternative to straight grinding, at least for now. Presumably, they'll add in a new Beast Tribe for crafting xp. Each profession has a Leve turn-in that's relatively cheap to make, and offers tons of xp at a decently low level, though, so grinding leves isn't that bad.
