Sounds good to me. Though i dont play a tank, maybe some day there is one that appeals even to me maybe
Viking with hammer sounds nice since as you said these kind of weapon type is under represented.

We have Viking already, they just decided that since Viking had only been in one main series game before, that it was better to call it Warrior. Also, Vikings never used warhammers.
They also never used large axes either. Also Warriors don't have lightning magic or Tsunami or skills you'd expect on Thief, so no, Viking technically isn't in the game.
Actually if you gave it a shield and either a halfspear or a harpoon along with an assortment of melee, lightning and water attacks along with some ice-themed defensive cooldowns all while having it based around the theme of the enduring conqueror and pillager rather than the stark-raving lunatic (which most historical Vikings weren't), it'd make for not just a rather interesting tank concept, but also a concept which more or less adheres to Vikings of past Final Fantasy games.
Blue Mage for Tank
Dancer for Healer
No more DPS until they kinda of readdress this balance

Off the wall response due to limited experience with the FF series. Others can say whether it would somehow fit with (given some modification) any major or minor FF jobs.
Editing at the moment for character limit...
I don't care what we get next but they better be a tank and healer.
"BAAAAAARD!" - 2018
Decided to add something in this post, not sure if it's really a spoiler but I will add this:
In the AST storyline you find out that Doma has Geomancers and the one you meet carries what appears to be a club.

And just to add to that-
Geomancers typically use bells (like maces), the NPC had a stylized club to be sure. Could have passed for some sort of chanting bell though. My one issue is he was using CNJ spells though. Probably just a placeholder, but still.
