I think it is something like this:

You change your retainer to another class with using the option in the retainer menu = retainer start at level 1 again
You change your retainer to another job by talking with the retainer NPC in the city market places and pay with 40 venture coins = your retainer keep the level

I think they keep their level only if the Retainer dont have a SOUL already equipped, example: "Conjurer level 60" can be AST by purchasing that copy of modern Vocation.
Like i said i have the Modern Vocation in my inventory but there are no options to actually use it, even on my second retainer still level 60 WHM.

So, if you really have changed your SMN retainer to AST, tell us how please, because until now i dont find any option for that.

It can be that he was just an Arcanist. All what I noticed before changing was the book in the weapon slot.
