Because everyone equates geographically central with being network central -- and that's not true.

They could have stuck the servers somewhere in the middle of the country, but if that location has insufficient network connectivity, they would be in a physically central location, but still on the edge of the network.

California has a ton of backbone connections (not least thanks to all the big names in internet being there and wanting the best links to/from their HQ locations) both domestic and foreign (a lot of transoceanic cables come ashore there) so even though it's not geographicallycentral, it's probably closer to the network center.

Plenty of games are now housed in Chicago (including League of Legends) which has a robust backbone. If we're talking connection quality there is little reason for it to be in Cali specifically.
