Why does this button not exist in the Armoury Chest?

Because nobody thought of it and because they do not consider it necessary as of now. It's not priority for them for now. Maybe later down the line.

Ironically, for regular inventory I'd love to have a "sort this tab" feature. I've already got things mostly separated the way I want, but some bits could use some organizing, without just mixing everything up all together.

Pfffft i think a switch to invintory button would be more useful like there is when you are dealing with retainers. And a button in your invintory menu to switch to your armory

All of my job change macros have a few lines dedicated to sorting both my armory chest and inventory.
