If you want bodily fluids and viscera, there are plenty of action RPGs out there for you. This is a final Fantasy game, and you're just going to have to deal with it as is, because that's how Final Fantasy is.

1. Why don't characters sweat? A long hike on Sohm Al should make any person, even the Warrior of Light, sweat profusely.

2. Why do enemies respawn in dungeons and raids? Once you clear it they should be gone.

They got back up.

A ton of games have sweating. Games that SE published have characters sweating. The first one that comes to mind specifically was Rise of the Tomb Raider. Final Fantasy specifically doesn't really do body fluids except tears and the occasional little trickle of blood to keep that T rating.
