Server with open Med plots in Lavender Beds, any out there?

I am looking to create a character on a server where there are actual plots available for medium houses in the Lavender beds. I would love input from folks from the different NA servers on what the availability is like, and it would take time to get the character to 50 and save up the GIL so ideally a server with not just one or two available rarely.

Honestly I think you're better off to wait for an opening on your current server. If any server has open housing plots, its most likely a small server, which means its going to be more difficult to get the needed money for the plot (less people buying your stuff). Earning 18millions+ gil will always take so long that having open housing slots when you start means nothing.

I agree with what Vidu said. Unless you plan to just outright character transfer (though, it is also worth noting that you can only take so much gil with you when you do) to a smaller server, you are better off just waiting for plots to open on your server. Plot demolition is done down to the very minute, not at a set time like 12pm every day or whatever, so keep an eye on the market. Check multiple times per day, and if you see a plot available (and you have the funds ready) do not hesitate to sprint there immediately. Even on medium-pop servers, open plots don't stay open very long.

Also, remember that Shirogane housing will be a thing a bit after 4.0 launches. I'm saving gil to just get a plot in Shirogane when the housing goes live. Just know that you will need to be really on it when it does, because those plots are going to be bought up faster than you can say "Thal's Balls."
