I agree that it's frustrating getting one-shotted at 50, but I also like the fact that I'm not invincible and that there is still some risk to exploration.

On topic - I'm looking forward to these achievements. It'll give me something to do when nobody in LS is on (which seems to be the case more often than not these days).
Kinda silly and wasteful to have all that data and no reasonable way for players to use it. Would be nice to scale the mobs down to the current player level range and use it for additional content and alternative leveling areas. Rather than have it rot like it is now.

Personally I don't feel that objectives like, reach all the nodes, should really be a challenge. Challenge is more reserved for defeat Moogle King type of achievements.

I understand where you're coming from. I'm just of the opinion that any content that's worth points, or rewards should present some sort of challenge, and that it should force you to use your brain a little bit (running past a bunch of mobs on your chocobo that you know won't aggro you requires no thought).

Also I have to assume that the high level mobs exist for when we get to that level (the cap will go up to 99 eventually, as evidence by the higher tier spells/skills, and armor that were dug up in the dats). They're mostly just scaled up versions of the lower level mobs, and I'm guessing that they were placed in the fields for the purpose of providing a road block for high level players, so that they are forced to tread lightly in some situations.
