The reason tanks are using AoEs on single target, is because the game is teaching you to do it now.

If I jump into sastasha as my PLD, I can hold hate on a boss just fine starting with Fight or Flight, and spamming my 1-2 threat combo.
The best DPS in high Lv60 gear can be a threat to my my enmity generation, but because their DPS is so high, the boss would die before they catch up to me in threat.

Now on my alt I recently took up, my 1st time into sastasha, and each dungeon afterwords, that doesnt work, even with HQ crafted gear.
You lose hate within 2-3 attacks, and wont get it back, even if you have provoke.

It has nothing to do with "Not knowing how to play" but a difference in pure numbers.
You're under geared/stat compared to the people syncing down (if they are able to pump out good DPS)

But you know what generate the highest amount of threat per GCD?
    Flash.
It has the same enmity modifier as Rage of Halone, but with less potency attached from the combo effect.

All I had to do, to catch up in threat, or stay ahead, was use flash on a single target enemy, and its easy.

Because low level tanking has now evolved into "Spam your AoE to hold hate" for new tanks, of course they are going to learn to do it.

(also, even at Lv60, it can be best to start with it, if you're DPS are higher iLv than you. In my Savage static, My DRk was roughly equal in iLv to my DPS members, so I didnt have issues at the start of each boss fight. But when I jumped to my iLv250 WAR, even WARs superior attack buffs, all 3 stacked up, I lost hate the moment I hit the 1st hit of my combo. I voke, hit with the 2nd hit of my combo, lost hate again, and then hit with Butchers Block, to finally get hate. Of course that DPS was dead by that time anyways. Had no issue with DRK with far less attack buffs. Sometimes its just safer to start with an AoE for solidifying threat.)

In any case, the fact you are asking questions alone and are very receptive to advice is more than enough proof that you're doing pretty well. Warrior is a very interesting class that's less forgiving than the other Tanking classes in my opinion, but I'm sure you'll so great ^^
Hey I didnt even know I could DO that. I have been staying away from Macros until I had a better understanding of what exactly I wanted to do and was actually capable of, but this may make me move a little faster in that area!

Thanks for the tip (and the compliments lol)

My defensive CDs, as noted above, are on Bar 8, but some are macro'd. For example, Holding L2 then holding R2 brings up Bar 8. I will press X twice for Foresight+Raw Intuition, or pressing Square twice will give me Thrill of Battle+Convalescence. Why the two macros? Because the cooldown on both abilities (Foresight and Raw Intuition, for example) are the same.
What im getting is that im going to have to get over my phobia of macros. Cool. Im going to try experimenting with something similar and let you guys know how it works out for me. These ideas really help.

    Appreciate it, everyone!

Macros can be very convenient ^^ Though they have their downsides too. Action Skills cannot be queued like they would when used normally and one problem I have when using my Warrior macro to simultaneously switch between stances and hotbars is that the hotbar change always happens without fault, but if I press it too early while still on GCD, the stance itself might not actually change. It's simply a matter of pressing it once more to register the stance change but it can cause confusion if it happens without you noticing(which it always will).
