Personally I'm not saving anything. When they come out I'll just craft a HQ set of level 50 gear which will be incredibly easy as a level 60+ crafter (which is what you should be levelling to with mog beast tribe instead of gathering gear). Then simply gear up through levelling via dungeons.
I tried to save all my levelling gear in HW for the new jobs, know what happened? I completely forgot about it. It was so easy to gear up through levelling dungeons that I never took any levelling gear off my retainer other than the brayflox sets I started with. If I started to fall behind in any particular slot, a vendor piece would usually cover it until I got a dungeon piece.
And if you're really vehemently against crafting, mnk and blm ironworks set will do.

- Acquire full 130 set (Augmented Ironworks / Dreadwyrm) of Casting gear.
- Save 130 Casting set to an ACN/THM (base class, for quick identification) gearset so I don't autopilot Expert Delivery at Grand Company and have to buy them all again.
- Acquire full 130 set (Augmented Ironworks / Dreadwyrm) set of Striking gear (accessories are of Slaying).
- Save 130 Striking set to PGL (base class!) gearset.
- Acquire 2× Encrypted Tomestones.
- Acquire 20× Rowena's Token (Poetics)
- Acquire 2× Carbontwine
- Acquire full 270 set (Augmented Shire / Alexandrian / Proto Ultima) set of Casting gear.
- Save 270 Casting set to another ACN/THM (base class!) gearset.
- Acquire full 270 set (Augmented Shire / Alexandrian / Proto Ultima) set of Striking gear (accessories are of Slaying).
- Save 130 Striking set to another PGL (base class!) gearset.
- Acquire 2× Micro Tomestones.
- Acquire 20× Rowena's Token (Scripture)
- Acquire 2× Illuminati Deepest Gobdip
Halve the item quantities if you're prepping for just one of the jobs. The 130 gear will be fine from 50 to 59, and being in full 270 gear will make catching back up on 61+ content quicker.

I'm in the process of creating full 130 sets + 130 weapon tokens and 270 sets. Those are probably enough. Also let leve allowances build up to 100 and accumulate enough rested experience before launch.
If you want a nice glamour weapon for both jobs you can save +90/+90 Aetherpool and buy Padjali weapons. By leveling in PotD you'll have enough Aetherpool to upgrade the weapons by the time you reach level 60, in the case you prefer Kinna weapons.
If you are planning to get more Anima weapons at some point, you can hit two birds with one stone by farming fates with the new jobs. Just pick up the quest and you'll get Luminous Crystals.
i do everyday some exercise with my short lalafell legs so i can run faster to npc to buy some rubbish gear to reach the min. ilvl for dungeons and just replace it with dungeon gear by time.

You need Carbontwine and Carboncoat. You can run the Crystal Tower weekly, Final Coil of Bahamut turn 2 and 3 for the upgrade item, or use Poetics to buy them (Best choice now). You need get Carboncoat for accessories and belt (shield in case of Paladin too) and Carbontwine for body, head, legs, hands, feet and weapon. Once you have it, get the gear and the upgrade item to the guy in Hyrstmill, the one near Gerolt. Talk to him to upgrade the gear.
