there's nothing inevitable about it. just leave them alone and save the development time on new things.
maybe give 1 free jump potion for every character so they can ignore that completely for anyone who wants to.
Removing classes probably will just mean you still start with classes at level 1, but once you do the level 30 job quest, the class get renamed forever to the job name. The class and job is the same thing, but there's just a name change at level 30. This would keep all the class quests and lore. The difference for the players would be they can't remove the soul crystals to go back to the class anymore. They would probably also do away with soul crystals and the armory space for them. The soul crystals would still be a thing in the story for the job quests but not something you actually hold in inventory space.

I recall it having been said elsewhere to, but I can't find the source for this atm so I'm not sure.

There is no reason to remove the classes are they currently are. They are just part of your story before you move on to a new teacher. They add a lot to the depth of the world.
