The outburst was just pure shock that we beat him. It does not mean we are anything more than a mortal that was blessed by Hydaelyn. He was just so overconfident and we just blew his mind. It's actually a very common saying after a defeat from alot of media.
And this fact is the precise reason for his words.

Powerful beings can't really fathom a mortal beating them... or even surviving their attacks.

This seems to at least being a question into the WoL's mortality. Magical destruction on a massive scale has repeatedly failed to work, but we are supposed to believe the guns and blades from gunblade land can?
If the fights were put into cutscenes, they would be extremely different. That magical destruction would more than likely be either prevented or dodged by us. The fights we play out aren't how the fight would play out lore wise. So yes, if to say we actually got hit by one in a cutscene directly, it would be lights out for us, the same being said for being shot and stabbed in a fatal manner.

A good example of this is the a12 cutscene with us dodging the light beam. If we could survive it, why would we have dodged? But it would have killed us otherwise. Would make healing even easier if we dodged their attacks in fights like we would in a cutscene...If the fights were put into cutscenes, they would be extremely different. I mentioned before but, almost nobody knows we're blessed by Hydaelyn, something that grants us power (it doesn't appear in the gameplay but it's heavily implied) and have the back up from 6 crystals (of Light? i don't recall them having a name in specific while the only thing I know about them is that they form an hexagon around us).
To the eyes of many, we're just mortals and most of them can only reach to sense that power and when they do, while they can't identify where does it come from (really few know about the Mother Crystal and how are we related to it: Ascians, the dragons and those with the Echo that has been spoken to by Hydaelyn plus acquaintances).
We still overpowered Diabolos when he tried to kills us with his huge wiping ball. We're plain powerful, even if we die trying to solo Elite Hunts. And we can't disregard that the Echo wouldn't make us come back again. For now, I think we're at about the same level as the Ascians, if not more powerful, thanks to the crystals. If the fights were put into cutscenes, they would be extremely different. I have made it clear within my other posts in this thread that the blessing of Hydaelyn boosts our own powers, however it is not to the point where we are immortal or Primal-like. A good explosion, well aimed gun shot, blade stab etc. would make us a goner IF they were in a cutscene, which is more lore based than the fights themselves. In your Diabolos example, we have 23 other people attacking with us to overpower that ball, how would we have done it lore wise? If the battle was turned into a cutscene, I would expect Hydaelyn's light would once again save us from it, as with Ultima in the elevator. We still overpowered Diabolos when he tried to kills us with his huge wiping ball. If we didn't have Hydaelyn's blessing, we would be dead at Ifrit. Her power makes us stronger, strong enough to take on Primals, but we our selves are still mortal, still prone to mortal deaths. That makes Ascians still quite a few leagues ahead of us
