Tears for Mor Dhona - In palace of the dead every once in awhile.
My favourite is Tranquility.
It plays during emotional moments in quests and I think it's just lovely.
Twilight over Thanalan is also great, if only because it reminds me of my first character and his encounter with "Lady Lilira". :P

Main themes aside, I'd say Skylords, Painted Foothills and Night in the Brume. Beautiful pieces that really capture the atmosphere of the areas they're in, and Heavensward itself.
The Maker's Ruin + Ultima are probably my top two. Hubris is really good too.
