All crafting classes are generally equal in regards to "easiest" or not.
But the answer is, you'll need to level them all for the cross-class skills to make useful things.

You start by getting every class to 15. The first set of CC skills is at 15. This takes less than an hour / class.
To get any craft to 15 just do every recipe once. The guild shop sells everything you need, except the cooking guild doesn't stock fish, you buy fish at the Hyaline just off the aftcastle. The guild quests provide more than enough shards. Check with the local levemete before you dispose of the stuff you crafted, some of it will be levequest fodder.
Your GC will have provisioning and supply missions after you hit Sgt. or Sgt.2 which will give you EXPs and comapny seals.
Also you want to start the Ixal beasttribe quests, they are crafting quests.
Crafting is an all or nothing ordeal. Because the cross class skills are so vital for overall and long term success, you'll find what you can do with the crafting game is limited to what you have leveled.
This does not mean that you can't place a certain amount of focus on a particular craft based on your main job. But even with SCH alone, Weaver will make most of your left side (Head, Body, Hands, Legs), Leatherworker will do the rest (Waist, Feet). Your right side however will be mostly Goldsmith and Carpenter. And your weapon, will be Alchemy. And that is for the final product. The final product will take intermediate materials, that will require other crafts such as Blacksmith in order to make, or you suffer the inflated costs for these mats off of the market board. Then there is also Culinarian if you want to boost your stats with food.
So there you go, one job using 7/8 crafting classes to keep weapon and gear up to date. Might as well level Armorer too ^^
Getting started is quite easy. There are tons of guides out there a google search "FFXIV beginning crafting" will pull up. In your case I would pick one and take it to 15 to get a feel for how your leveling will go down. After that, get the rest of them to 15 for your first set of cross class skills. There are faster ways of leveling that I don't recommend unless leveling crafting on an alt character after you have sufficient crafting experience with your main character.
If this is your first go, I highly suggest crafting everything in your crafting logs, and once you have enlisted in a Grand Company, you can craft certain items and turn them in once per day for a big chunk of EXP. There are also weekly bonuses by crafting enough NQ and HQ to hit a quota that grants you an exp bonus. These also are quite large, and I feel this is the best way to actually learn how to craft. Also note than whenever turning in anything for exp (GC turn-ins, beast tribe quests, leves) you will get bonus exp for turning in high quality items.

I'll join the recommendation to run GC hand-ins and Ixali quests.
The GC hand-ins especially at the lower levels can be quite easy/cheap to make, give a lot of experience, and there's always the bonus of GC seals.
For the Ixali, think of it as a long term investment. Once you get high enough in the ranks with them, you can exchange their unique beast-tribe currency for ranks 1-3 gathering and crafting materia, and the latest rank gives you rank 4 materia. Kind of getting ahead of things here, but if you'll want to invest seriously in end-game crafting, those are all things you'll be glad you have relatively easy access to.
Other than that, it's leves. There're a lot of good guides out there about what leve is the best as far as cost-exp ratios go, but I personally like to run them all at least once. Get that first-time-crafting bonus while you're at it.
If you want to learn to craft, make everything yourself.
If you just want to get a complete set of 60's (70's come SB) and don't particularly care about having a clue what is going on or how to make stuff, buy leve kits and stuff to hand in to your GC.
