You could always level an alt on Eu or Jp servers during the downtime if you wanted to play FFXIV during that time.

This is a great idea to upgrade and move the servers closer just before an expansion. Things will be more stable at launch then without this.
I'm bummed I won't get to play for a few days but stoked at the new server equipment part and the fact that they will most likely be in America is good
Notwithstanding the fact that their current setup can't even handle the traffic it's getting right now at the lowest point in the expansion cycle. Not doing this would be suicidal.
fun fact, ff14 didn't have multiple datacenters when it launched as ARR but with in the early access portion the df system was getting bog down, and and errors kept happening, so they decided to seperate the na and jp sub centers to alleviate this issue. My guess is that they will move them to Chicago or Dallas to get the best coverage and if the EU move was any indication, we should prepare for 3 to 4 days of downtime.
Edit: The only kind of mergers I would be interested in seeing would be to make a super server where they merge the entire Data Center into a single entity.
They would need to buy/rent mega servers to group up all the servers but with bulmung and gilgamesh being so big already i don't think it is a good idea.
