Unable to challenge Tataru to Triple Triad

Hi.

I've been working on getting all of the Triple Triad cards. It's been a journey so far. However I noticed that I am short a few NPCs from getting Heavensward Y'shtola. I am at 58/60.

Now I know 1 of them is a Vanu Vanu I have to get Bloodsworn with. I know 1 of them is Tataru (as I never played her before I don't believe). I am going to track down the other NPCs.

However as of 3.5, is there anyway to actually challenge Tataru?

No way to challenge Tataru anymore.
However even without her there are 61 npcs you can play against in the game: http://ffxivtriad.com/npcs

Even if you challenged Tataru previously, she would not count towards the achievement. Lewena in the Gold Saucer also (for some reason) does not count, meaning you must beat every other possible opponent to get Heavensward Y'shtola. The most common missing ones are the Ixal, Moogle, Vanu Vanu and Vath opponents, as they can only be challenged after reaching max rank.

I discovered this the hard way recently - I haven't started the Vanu Vanu and Vath quests yet, so have a long road ahead!

And then there's players like me who don't do all that much battle content. I haven't stepped foot in Alexander yet, and there are two Triple Triad NPCs locked behind Alexander quests - the only two I am missing.
