Well ESO would be the Game for you then OP. All End Game Content is being done all the time because there is a lvl cap that never gets raised and many Sets of Gear Stay relevant through the entire Game. There also are multiple difficulties from Normal to Veteran, Veteran Hardmode and Trifecta. Like fighting all bosses at the Same Time.

All Dungeons stay Relevant cause they scale with level as do their Drops. It can be overwhelming though because there are many Systems in the Game and a In Game Store with pretty forward marketing. It is not pay 2 win but pay for convinience.
