I second this request. I've been seeing this claim pop up here and there, but have not in recent memory seen any interview claiming they wouldn't do it again so much as them saying it was difficult. It's like it must be the one interview that flew under my radar.

PAX East 2015 FFXIV Presentation. Link should work properly but it's around the 25:30 mark of the video.
Things can change in an almost two year period though. They would've had to finalize their job selection by around May-June of 2016 to make the release date if the data they provided is accurate so they might've changed their minds in the year after the above presentation which was released in March 2015.

Fair enough, the dev team said that.PAX East 2015 FFXIV Presentation. Link should work properly but it's around the 25:30 mark of the video.
If I want to nitpick a little, I'd say that the burden is not the same when you design three new jobs while releasing an additionnal job than when you just do three new jobs.
But, hey, we'll see in February.

I agree. There's a difference between releasing four jobs versus releasing three jobs even if that fourth job is released a bit prior to the other three. Their development would have to be in parallel for at least part of the development and strain development resources further. And of course it's been nearly two years - the developers may have changed their mind since then.
I'm also hoping that the editted twitter post that indicated "two" jobs also an error on the "number of total jobs bit" as I would like to see three jobs personally. As you said, we'll see in February.

You have to also consider they still haven't figured out how to balance those jobs. Astro went from borderline worthless (3.0), to underplayed (3.1 onward) to competing with Warrior for OP status (3.4). It took them three patch cycles to finally get Machinist settled. None of this factors how the other jobs are influenced. White Mage basically has no purpose and the continual buffs to Machinist forced attention onto Bard, wherein both pushed Black Mage and Summoner out. Meanwhile, Dark Knight has been kicking Paladin since 3.0 and Monk struggles to find a place in the meta. I'd rather they focus on adjusting the current jobs instead of adding new jobs to further complicate things.

That's totally different topic
Can they add three new jobs ? I'm fairly confident they can.
Should they add three new jobs ? Well...for DPS, I think they were able to maintain pretty much any setup equally viable, since you always have a lot of DPS in a party. For tanks and healers, as long as we have more jobs that available spots in a party, some of them will always be kicked away.
