As far as I am concerned, my favorites are...
-Praetorium (excluding the cutscenes format which needed improvement) because of the setting and music. I especially enjoy when there's new players and people wait on them, because we get to hear a loop of the BGM.
-Haukke Manor HM because of the setting. I miss when people were lowly geared enough that it was not a steamroll, too.
-Lost City of Amdapor (except last boss) because... EVERYTHING is awesome.
-Tam-Tara Deepcroft HM. This whole storyline was part of the inspiration behind my latest story, which lead me to get extremely attached to one of my characters within, and I made characters online based on her. If that isn't telling enough...
-The Vault. Just a very cool setting and bosses. The second boss in particular.
-Saint Mocianne's Arboretum. Am I the only one who knew what an arboretum is before this dungeon? I love this sort of setting.
And I rather dislike...
-Aurum Vale due to length and tedium (except second boss).
-Copperbell Mines HM because the mechanics of each and every boss are annoying to perform and require to stop or halt the action.
-Castrum Meridianum, even though I could never precisely tell what annoys me with it exactly.
-Pharos Sirius HM. I find it so, sooo uninspiring. The BGM is still nice though.
-Most low level dungeons (Halatali, Haukke Manor and Sunken Temple of Qarn get a pass) because they are overly simple and rather boring.
A lot of dungeons I like are partly related to BGM I like. This is especially true with Lost City of Amdapor, which keeps the dungeon's theme during combat (except bosses). Many dungeons I dislike or am somewhat indifferent for are partially because the BGM does not inspire me, too. Good music is always important for me in gaming.

Worst is neverreap, best is Amdapoor keep.
Most favorite:
Snowcloak, Wanderer's Palace, Hullbreaker Isle. I love the fights in these, and general atmosphere.
Least favorite:
Sastasha and Copperbell (too many time through this, always end up there when queued),
I liked the Vault. Felt like a mini horde mode, bosses made sure you were on your toes.
Neverreap was also fun, bosses fights felt more involved.
Brayflox may be long, but it's a good looking dungeon with many optional encounters, which the HW dungeons lack.
Most hated:
Toto-Rak. Dungeon seemed a bit long and cramped. I feel sorry for any new tanks who have to go there.
Aurum Vale because people like to ragequit that place, making it take much longer to finish if possible.
Aery (the DPS check on the final boss is very easy to miss if your DPS is lacking) It's much easier synced than going through fresh though.

Honorable mentions: Brayflox Longstop (Hard), The Sunken Temple of Qarn (Hard), Haukke Manor (Hard)
HW - Sohm Al (Hard)

ARR - The Thousand Maws of Toto-Rak
Dishonorable Mentions: The Tam-Tara Deepcroft (normal), Sastasha (Hard)
HW - Neverreap
Dishonorable mentions - Dusk Vigil, Saint Mocianne's Arboretum

I don't like any of the Heavensward leveling dungeons or Saint Mocianne's Arboretum.
My favorite would be Lost City of Amdapor Hard, (but Sohr Khai is really pretty, so it makes the list too).
I've personally enjoyed the two new dungeons. Baelsar's Wall AND Sohm Al (Hard)
It showed us some things that I'd like to see much more of (and more potent) in other dungeons, the archers on the wall giving out windbite and venombite. Each time I run it, I see HP on all sides plummet causing the white mage to Esuna if things don't go fast enough. Random attacks to other players not the tank and area wide damage gives the healers more to do. I'd like to see that more in 4.0
In Sohm Al, everyone talked about how they are tired of seeing indicators. The second boss doesn't really have any but he glows, points to you..just his actions are different and less orange circles everywhere makes it more fun to run. Sure it's no different than him facing you, inhaling and an indicator jumping below you to move, just feels nicer is all.
I wasn't a giant fan of Brayflox's Longstop (Hard) though.
Mainly because the dungeon was set up so you can pull so much, and that paralyze was annoying if it got off, the final boss was interesting and the mechanic of having it fire at you through the first half was nice. If they did what Sohm Al did for their boss and didn't make it an obvious indicator it might hit the PT more, causing us to adjust to the additional damage.

In terms of boss mechanics I'd say my top choices are Sohr Khai and The Aery. Can't really explain how their mechanics are #1 for me but they flow easily and don't feel overdone.
Worst for Boss Mechanics would be Tam-Tara Deepcroft HM (due to how easily someone can troll and wipe the party on the first boss) and Neverreap. No explanation needed for my fellow BLMs during the dark days of 3.0.
For best Aesthetics I choose The Antitower for the 2nd Area and the fountains flowing upside-down when going to Calcabrina. 2nd best looking dungeon would be The Great Gubal Library NM/HM. Always liked the look of Sharlayan furnishings.
Worst Aesthetics would be any Duty that keeps you in an enclosed area for a majority of the dungeon (Sorry Sastasha NM/HM Copperbell Mines NM/HM, Toto-Rak, Dzmael Darkhold, and Aurum Vale!). For non-caves I didn't much like the looks of Halatali NM/HM. the place just looks all too similar for me. :/
