I have a question about mobs in general. Are there mobs people for drops, like gear? Like some other games will have named mobs that have a low chance of dropping special gear on death.

No, you get gear from dungeons - they are in chests. Also shop NPCs or through completing Main Quest Scenario.
You can also get gear crafted through the crafter jobs.
When you reach endgame, there are tomes you get from running dungeon roulettes and such. You exchange those for gear as well.
There is one way to get gear from overland content, apart from quests, and that is the treasure chests that very infrequently appear in leves.
Also, Grand Company Seals can be exchanged for gear while you're leveling, in a similar way to the Tomes mentioned by Muse, though truth be told you're unlikely to get sufficient Seals to get gear which is still going to be useful at the level you manage to get them.

For actual gear, no, that doesn't drop directly from mobs. But some of the crafting materials that do drop can be quite useful. (Well, useful to you if you craft and valuable to sell to other players if you don't.) Some more so than others, of course.

Yea im jumping into crafting hard core. Awsome game...im more of a dungeons and dragons guy as far as lore.....so the races and stuff are weird to me. But its a great game overall.
so that's what I was trying to figure out is where the good better gear comes from it are the drops from moms or glue from dungeons I haven't done a dungeon yet I'm about level 20 so I guess I should start doing this.

Dungeon chests are a good source for getting good gear. Of course, that relies a bit on luck, as first the item you want has to be the one that drops, and then you have to win it if rolling against teammates that want the same item. And you have to hope both of those happen before you out-level the range at which it would be useful. But you'll often find stuff in dungeons that's better quality than what you can get from vendors or regular quests. Keep following the Main Scenario Quests and they should start unlocking several dungeons you can run. (You'll actually need to run quite a few of them as part of the main storyline, but that only requires running them once. Once you've done so, however, you can keep going back and running them again for more experience and loot.)
Crafting can also provide good gear. When you craft gear, you can have either a Normal Quality or High Quality result. The normal quality results from crafting are the same sort of gear you can buy from vendors (or in many cases get from quests as well). But if you can produce a High Quality piece of gear it will have better stats while still requiring the same level to equip it as its normal quality version.
Quests can also provide gear, but at low levels, this tends to just be the normal sort of gear you could buy from vendors or craft (Normal Quality). I think the first quests that provide a really good gear upgrade are your level 45 and 50 job quests, where you get your job-specific Artifact Gear. Then some other level 50 quests now provide further upgrades to help newer players just reaching that point catch up to players who spent a long time there while it was level cap.
At level 50, and again 60, (and presumably 70 once the next expansion comes out) there will also be gear you can trade for using special token currencies called tomestones. But that's a concern for later. For now, while leveling up, good gear will come from dungeons or High Quality crafting results (either your own crafting or bought from other crafters through the Market Board), with passable (normal quality) gear coming from crafting, quests, or NPC vendors.

There actually is almost exactly what you're talking about. There are special, very rare, named monsters that appear in random spots in each zone of the game. These are part of something called The Hunt. They reward Allied Seals in ARR areas and Centurio Seals in Heavensward areas, and these seals can be traded for gear. But those monsters are only for Level 50 and 60, respectively, and they really are rare. You'll almost never see them unless you're looking in every corner of a zone, so when you're able to access The Hunt stuff, I'd just stick to the daily and weekly Hunt mark bills if you want the gear that comes from those seals.
There are also the Odin and Behemoth special boss FATEs in ARR areas which don't show up on the map and only occur every few days. Heavensward's equivalents are some kind of Coeurl and Proto Ultima FATE. Like the Hunt marks, this is only for Level 50 and 60 respectively. Nowadays, practically no one is doing them, and they reward tokens traded only for gear to be used for glamour (system that changes your gear's looks to whatever you want), but hey, it's similar to what you're asking about.
Btw, it's still worth rolling Greed on gear in dungeons you can't use. You can trade any gear with pink (Aetherial), green (Uncommon), or blue (Rare) text color to your Grand Company for Seals. Your most common source of gear as you level is going to be the Main Scenario and Job quests and NPC vendors, so make sure to check an armor vendor every time you arrive in a new town.
