You can highlight them and try them on your character but they are greyed out so you cannot confirm to use them.

Not only would that be helpful for this problem but as a collector it would also be nice to know which styles you were missing when they were greyed out at the aesthetician! And if you were making a new character but desperately wanted them to have (say) an afro, you might feel disheartened and not realise you can just unlock one in-game later. Good idea.

I think it is because, when you change, you're not on your server but the data center lobby. So technically, the game cannot see what you have unlocked.

This may have resolved this issue since the lightning hairstyle is visible, however they could just mean the grid has been expanded. Hopefully now all hairstyles, whether you have them or not, can be previewed when editing a character.
