Okay I just got Volume One and it claims that it is a collection of tales chronicling the adventures...of the Warrior of Light (as in, us). The Big Questions are, who is writing these books? and possibly more importaintly, why does Amphilece need these books when are likely to tell her these stories ourselves?

If you go and speak to her, she says that the books aren't going to write themselves.

Implicitly they're a sort of journal we write before giving them to her.

Both Anima quests in this patch are basically us reliving our experiences much the way we do in the Crystal Tower weekly. In this particular case we are either meditating at the sight of the conflict in the case of the cloth or writing down what happened in the case of the books.

As to why, probably so she can reread them. After all we basically do the same thing with Wonderous Tails.
