I understand the tier IV, since they can be traded in for sands if you get three umbral or three astral, but the tier V ones? I've never heard of much use for them, but then again, I don't do any sort of transmuting (and not even sure what that is).

Go to the goblin out in Central Thanalan that teaches you how to meld. He'll take 5 materia, your choice, and turn them into a random new one. Generally the same level as most of what you use, sometimes a step lower, and even more rarely higher. So basically you take all these cheap IV and V elemental or useless stat Materia and try for things you or other people want, like V ranked Crafting/Gathering Materia.
