    The gear from that tomestones will probably go to the centurio merchant and are from then on buyable from them with centurio seals. Your tomestones are more or less worthless but you can exchange them in Mor Dhona by Aurianna for the prior capped, now uncapped tomestones with a ratio of 4:1.

    For your example when the next tomestone would come and/or Lore will just kicked out, you can exchange your 100 Lore tomes into 25 Script tomes by Aurianna in Mor Dhona.

    Also most things like crafting mats, minions and other stuff from Lore tomes will probably go to Script tomes but their price will be halved. We saw that in ARR and i'm sure it will be handled the same way in HW.

    You have one tome cycle in which to trade them in for the next tier up. At any given time, there will be:
    • high level tomestones, the ones with a cap on the number you can get — the latest ones to be added
    • low level tomestones, uncapped — the previous tier added
    • obsolete tomestones — two tiers ago no longer drops and can no longer be used directly, but leftovers can be traded for the low-level tomestones one tier up the list.
    • (tomestones from three or more tiers ago get removed from the game. If you haven't traded up yet, they're lost.)
    When a new tier is added, the others get knocked down one level in that hierarchy.

    But there is one exception to the loss of old tomestones after three or more tiers of new ones: The top tier from a previous level cap remains. We still have Tomestones of Poetics because they're the top (and now only) tier available to level 50 ARR players. I'd expect the same to happen with Tomestones of Scripture (or possibly its successor if there's another tier added before the next expansion). The last ones to be introduced during Heavensward patches will likely remain in the game permanently for level 60 content, even after Stormblood brings new ones for level 70.

    It's also worth noting that the most-recently-deprecated tomestone has been useful for more than just exchanging for newer tomestones; some items like those for the relic weapon quest are still available for purchase using leftover Esoterics.

    Anything about the future here is really just speculation and extrapolation, but I think the right theme is the focus on the level cap rather than figuring out how many iterations ago a tomestone was introduced. So we will indeed likely continue to have our Poetics for 50 and our Scripture for 60 whenever we start a new and long line of different tomestones for 70 stuff (Allagan Tomestones of ... Entertainment?).
