This isn't entirely true. Yoshi said that certain things like the umbral era storyline and the maps and other elements will be scrapped, but revisions they've done since taking over will be retained. Things like the new combat system and the recipe revamps, these are things that have been introduced now, but will be retained and need only be converted to the 2.0 servers.

So something like a pet class, for instance, won't have to be restarted from scratch when 2.0 hits, just adjusted to the new servers. Yoshi has even said that if the schedule goes well enough, the possibility for new classes, (including summoner or beastmaster) before 2.0 hasn't been ruled out.
